Meatless Mondays

When I look back several years ago, I hated sweet potatoes! I couldn't stand the smell or texture & I couldn't imagine eating them with any meal. Fast forward a few years & I cannot get enough of them. They are so delicious & are so versatile.
I mean who would have thought sweet potatoes could be turned into a muffin or pancake.

Cinnamon Sweet Potato Pancakes
I really like sweet & salty foods together, so this chili with sweet potatoes is right up my alley & I know my husband would love it too! And it would be the perfect food for the Fall season. Like I said before, I am totally into meals that are quick & easy... so this sweet potato burrito bowl w/ vegetables & quinoa would be a great dinner for a busy week night.

So what are some sweet potato dishes that you make for breakfast, lunch and/or dinner?

30 Things

Well, since today is my 30th birthday (holy crap)!!! I thought it would be cool to tell 30 things about me.
I know, I know... you're super excited (ha!)!

1. I love colors & patterns but cannot bring myself to decorate with it at home. This is one of my goals for my 30's & in our new home.

2. I am absolutely, without a doubt, completely terrified of getting old...!!! Wrinkles, grey hair, forgetfulness... it literally causes a panic attack.

3. I have a issues with trusting people- I feel like if you trust no one then you won't get hurt. But if I do trust you, I will tell you everything... maybe a little more than you want to know.

4. I love cold weather & being bundled up with tons of layers.

5. I lived in Massachusetts for 10 years & even though I was little, I miss everything about it. Apple picking, the beautiful seasons changing, the awesome houses, and the cozy feel of everything.

6. I am obsessed with being neat & organized. I know when a single item has been moved.

7. I cannot live a day without my iced chai tea.

8. I have remained friends with my elementary school friend from Massachusetts- 1,300+ miles cannot break us (I love you, Jaclyn).

9. I cannot stand germs! Lysol wipes are my BEST friend!

10. I have officially been with my husband for half of my life.

11. I am the worlds craziest planner- I have spreadsheets & lists of plans for everything.

12.  I have a real weakness for sandals & bags. They are both my favorite things to buy.

13. I am a creature of habit & have a very tough time adjusting or using new things.

14. I love to grocery shop alone so I can take my time & look at everything in each & every isle.

15. Being with my family is where I am the happiest. I am so beyond blessed to have such a close, loving, and caring family.

16. My favorite time of the year starts at the Eve of Halloween through Christmas.

17. I love roller coasters, but have never been to Six Flags or Busch Gardens.

18. I am obsessed with underwater creatures & how beautiful underwater is, but I am scared to death of going underwater (besides in a pool, if someone is with me).

19. I hate driving- if I was wealthy, I would get a driver... but in the meantime, I'll just use my husband.

20. I want so desperately to learn how to cook, but I don't have the patience to do it. Another goal for my 30's.

21. I cannot and will not wash dishes without my good ole yellow dish gloves.

22. I love going to concerts- last year I saw so many of my favorite artists (Luke Bryan/Jason Aldean, Miranda Lambert/Dierks Bentley/Lee Brice, Brantley Gilbert, and Carrie Underwood/Hunter Hayes).

23. I am the pickiest eater & cringe at the thought of my foods touching (Yes, I know it all goes in the same place, but I hate it!)

24. My mom is my best friend & I truly have no freaking clue what I would do without her..

25. One of my biggest pet peeves is people who chew ice- I hate the sound of it. It is literally the equivalent to nails on a chalkboard.

26. I have lived in Florida for twenty years & have never been on a jet ski or went tubing.

27. As weird as this may be, I love windy, cloudy weather... maybe Chicago is the state for me.

28. I haven't had gluten or dairy in years, due to allergies & it was the hardest thing ever.

29. I bought my 1st house on birthday & three years later sold it on my birthday (I am officially homeless.).

30. I want more than anything in this world to be a Mom.
So there you have it, a little more about me! Now I want to know what we have in common (leave in the comments below) :)

Birthday Wishlist

So you're probably thinking, what grown woman has a birthday wish list?! Well, this is a huge birthday for me, I will be celebrating my 30th birthday (while crying) so I should have one. I feel like having a wish list & getting some wonderful gifts will make this birthday a little less painful. I mean lets be real, who the *bleep* wants to exit out of their twenties? Not me !

So on to my wonderful birthday wish list... I thought it would only make sense to start my "grown up" thirties with a nice leather Tory Burch bag. I mean look at it, it screams 30th birthday gift, doesn't it?! And what better than a gorgeous Kate Spade planner for 2015. It is the perfect gift for me. I have lots of plans for my thirties, so this is top on my list.

I have also been dying to have one of these stamped gold bar necklaces. Etsy has so many amazing ones to choose from. They're inexpensive & are so meaningful. Since I need to make sure my thirties goes by so sllooowwwwllyy I need a nice fitted watch to help me out with that. And this fantastic gold/metallic watch will work just nicely for that. And last but not least, a white fluffy fur rug for my bedside, with some of my favorite white hydrangeas on my nightstand.

Anyone feel free to purchase some of these goodies from my wish list.
I promise it'll make me smile :)

Meatless Mondays

Well... this is my last week in my twenties. Quite frankly, I am not sure how I feel about turning thirty. Part of me is okay with it (what other choice do I have, right?!), there are a lot of exciting things to look forward to. We are going to be building a new home in the next several months. We are going to try for a baby after we start to build our new home. And I plan to lose weight & lead a healthier lifestyle (prepping my body before it has to grow a baby- good motivation!).
And then I think about the grey/white hairs that I keep finding (damn those things!) & that I am going to have to start dying my hair within the next year or so. And just being scared of wrinkles and getting older. I just don't want to!

So with all that being said.. I figured what better way to feel a teeny tiny bit better about my upcoming birthday then to have meatless Monday all about yummy desserts.
You're welcome...
These are so drool worthy.. oh my goodness!! I definitely have to figure out how to make some of these a gluten/dairy free version (this should be real good for my "diet"-ha!).

Happy Monday !!

Friday Favorites {Anthropologie}

My favorite day of the week is here & it is time to share some of my favorites. Since we're going to be building a new house in the next several months, I have literally been non-stop I have to have this mode. Most of the things that I have been wanting most are completely out of my budget, but I still can't help but want them- in hopes that they will eventually go on sale or I hit the lottery.
So my ultimate favorite store, ever... is Anthropologie. I am obsessed with their house & home goods. Everything is so unique & unlike anything you would ever find in another store. The quality of all of their goods are impeccable. Every I have to have this list has at least one item from there that I am dying to have.

Their bedding is truly heavenly. The patterns of the quilts are gorgeous & so feminine which I am crazy about. I also love all of there chairs... I mean this fur chair is amazing! I want it so bad but unfortunately the steep price will only land it in my dreams.
In our future house, we're planning on getting a large white dining table (I cannot wait!), so these scrolled rattan chairs would look amazing. The mixture of white and teakwood is the look I am going for.

And I don't know what it is lately, but I am loving all of these different types of fabric covered stools & reclaimed wood side tables. I want to have one of each color in every single room. I recently saw a tutorial on how to make these fabric covered stools, so I might try it out. As for the reclaimed wood side tables, I am dying to have these for our living room- it would look awesome!

So have you seen any look-a-likes of my Anthro favorites with a budget friendly price? If so, let me know :)

Fall on My Mind...

I know I have said it before, but I am going to say it again... I cannot wait for Fall weather to come! I am ready for sweater weather, bundled up in comfy scarves... all while the cool air smothers my face. But since I live in wonderful Florida, that cool air that I am ever so dreaming of probably won't make its appearance until late December. The blasting hot weather here hasn't stopped me from craving all things Fall.

If you're like me then you have already been to Bath & Body Works to stock up on all of the latest Fall goodies. Pumpkin-waffles-apple-oh-my! I seriously am obsessed-- I want to shower & wash my hands all.the.time! I snagged up this cute little white owl candle holder last year & I love it (they have it online now)! It is perfect for the Fall :)
Bath & Body Works
I have my eye on so many sweaters & jackets already! I love the long open cardigans- they are fun & functional for a casual weekend or dressed up for a workday. I am dying over this colorful tribal one, cannot wait to scoop it up when it comes back in stock.
I also really like these two light weight jackets- they would be perfect for the non-existent Fall weather that Florida has.
Denim Vested Hoodie || Vital Tribal Cardigan || Blanket Knit Cardigan || Heart Jacket
I am keeping my fingers crossed that the cooler weather comes sooner or later. In the meantime, I'll just be having Fall goodness on my mind.

Have a good weekend ! I will be packing my life away & moving in the blasting hot weather :)

Lovely And Oh-So-Pinteresting {bedroom inspiration}

All I can think about lately is how much I want to sleep. Packing & moving is so tiring! I cannot wait until all of it is over so I can relax a little! If you follow me on Pinterest, then I am sure you can tell what mood I am in by all of the amazing bedrooms that I have been pinning.

This bedroom looks so fresh & feminine. I love the mixture of the patterns with the pillows & the drapes. In our new house I would love to have a little seating area in front of our bed. Those little stools are super cute!
This bedroom is not something that I would normally be drawn to, but I am dying over it over all of the patterns that are used. I would never have thought to use the pillow, blanket and rug together... & it seriously looks amazing! And this photo above the bed...wow! It truly makes the room. Another thing that I am drawn to is the light, girly accessories on the nightstand.
Lately, I am obsessed with the look of white & antique brass finish. And this room is incredible- from the night stand nightstand lamp all the way to the drawer pulls. And if you know me, then you know I am obsessed with huge matted frames.. so I love how these pictures are framed & placed above the bed.
Again, we have the antique brass finish nightstand lamp. And I have never seen a tufted headboard in this color before & I want it so bad. I am loving all the different pillows that they have used, again... things that I wouldn't have ever imagined would look good together but they do. And my ultimate favorite thing about this entire bedroom... this super cool print!
It is almost the weekend... so until then, daydream away of these sweet bedrooms.

Meatless Monday

Hope you all had a good weekend !! The weekends sure go by quickly. We have been so busy lately with moving that I truly have been slacking so badly with blogging. I am hoping that when our entire move & the sale of our home is over, I can start to focus back on weekly {consistent} posts.

Since we have been busy & the majority of our stuff is packed, there hasnt been a whole lot of cooking going on. That doesn't mean that I can't drool over some yummy meals.

Once we are settled somewhere, I am totally making this breakfast (potato & red pepper frittata), which is gluten free & looks so yummy!! And for dinner I will be making the baked rice w/ roasted corn, peppers & onions. Don't they look so good!?

And look at these delicious sides... they would be super easy to go with lunch, dinner or even a cookout.
