Taco Pie

My husband & I love tacos! We eat them about once a week (insert budget eyes), which can tend to get a little boring. There is no way that I would take tacos off our weekly menu, so I had to figure out a neat idea to spruce them up a little bit. 
I still wanted to be able to incorporate all of the toppings & the taco seasoning, so I came up with a gluten free / dairy free taco pie. It was super easy to make & it left quite a bit of leftovers for lunch the next day. 

Here's what you'll need to do:

Oven Temperature - 350 

Ground Turkey
Gluten Free Taco Seasoning (I just used a store bought package)
Dairy Free Shredded Cheese
Gluten Free Wraps 
Dairy Free Sour Cream
Tomatoes 
Olives 
Onion 
Organic Corn 

Cook the ground turkey until browned. While cooking the ground turkey, chop up tomatoes + olives + onion. Once meat is cooked, add organic corn + onions + gluten free taco seasoning; stir until combined. 
In a deep glass dish (oven safe), do the following: add meat mixture & add gluten free tortilla on top (repeat this step until you run out of meat mixture or fill dish; whatever comes first); when you get to the last layer add dairy free shredded cheese. 
Bake for about 20 minutes or until the tortillas are crispy. Cut like a pie & serve while warm. Make sure to top each slice with yummy olives, tomatoes & dairy free sour cream.
